I’m not so sure, but from what I heard there are no records about the interior of the 7TP tank that survived. I mean not only colours, but the general layout, too. All important papers were first captured by the Germans, and then probably taken over by the Soviets.
I read some Polish forums and came up with three possible interior colours: light gray, light sand or just military green. As for the engine compartment the above coluors are possible, or it could be just left in primer (red oxide). Hatches probably interior colour. You have a lot of freedom here, because anybody wanting to prove you wrong will have a hard time coming up with any proof.

Since the 7TP is based on a British 6 ton tank, is it possible the Polish copied the interior and interior colors as well?
If the interior color of the 7TP is not known, is the color of some other, concurrent tank known? That sort of thing is usually standardized. For example, what is the interior color of a TKS? Knowing the interior color of Polish armored cars of the same era may also help.
