I like their kits but if I’m building a plane I want a pilot in it. Does anyone know of any company that sells pilots

There are any number of companies including Peddinghaus for example. It depends largely on the scale and era you want. You can narrow your search by indicating the parameters you want, i.e. 1/72 WWII pilots.
