I’m an 80 year old Marine who spent my last two years of active duty at Camp Lejeune, NC. I was assigned to an LVT E-1 Amtrac Platoon and have been looking for a model of the LVT E-1 Mine Clearance for decades.
So when I saw the picture of this on Kit Maker I was wondering if there would be any chance of buying it? Can anyone tell me anything about it, or any other LVT E-1 model that might be available?

No 1/35 plastic kits. I have seen some 3d printed plows.
There is a 1/72 resin kit from Croco Models.

I am assuming you saw this one which was a scratch-built conversion by a member here named Ralph who goes by @Mech. He is still around and may answer up about it.
There was a 1/35 plastic one announced around 2017 by Amusing Hobby and they released a boxart for it, but it was never released.
